sausage fritatta


6 egg whites
3 whole eggs
2 Tablespoons skim milk
salt and pepper
4 ounces mushrooms, sliced
1/2 of a large onion, chopped
1/2 pound of homemade turkey sausage (found on this site under the breakfast category)

Place 1/2 pound of turkey sausage (the recipe makes 1 pound, so only use half) on the bottom of a greased pie plate. Saute onions and mushrooms over medium heat for approximately 4 minutes or until tender. Place overtop the turkey sausage in the pie plate. In large bowl place eggs whites, eggs and milk, season liberally with salt and pepper. Whisk until well blended and pour into pie plate. Bake at 400 degrees for 30-35 minutes. It will be firm and golden brown on top.
